We were inspired to make a special gin and tonic cocktail using Bertha's Revenge Gin made from our friends at Ballyvolane House, Martinstown House elderflower cordial, Fever-Tree Indian tonic, and a splash of beet root juice for an earthy undertone. Garnish with a few beetroot slices and add a Tufty-cat.

Wonderful dinner party last night!
Soft, creamy Ardsallagh goats cheese, with spiced walnuts, caramelised pears and peppery green leaves to start. Roast carrot soup with coriander pesto was followed by grilled sustainable cod, curried sweet potato purée, red pepper hollandaise and grilled asparagus. All finished with apple and raspberry crumble with cold whipped cream.
Then coffee, chocolate and chats in the drawing room.
A long day ahead! We're clearing in the front woods, opening new paths through the trees and generally giving the parkland a spruce up.
Naturally this fella strutted along to have a nosy at the proceedings.
